Recipe: Fat-Free Cranberry-Orange Muffins (using egg whites and applesauce)

FAT-FREE CRANBERRY-ORANGE MUFFINS

2 egg whites, beaten
2 cups flour
1 cup sugar
2 teaspoons baking powder
l/2 teaspoon baking soda
1 teaspoon salt
1/4 cup applesauce
1 tablespoon grated orange peel
3/4 cup orange juice
1 1/2 cups cranberries, chopped

In medium bowl, beat egg whites; set aside.

In a large bowl, combine flour, sugar, baking powder, baking soda and salt.

In separate bowl mix applesauce, orange peel and orange juice; stir into dry ingredients and stir just until moist. Add cranberries to mixture, then fold in egg whites.

Spray muffin tins with nonfat cooking spray. Fill greased muffin cups 2/3 full.

Bake in preheated 350 degree oven 25 to 30 minutes or until golden brown.

Makes 12 muffins
