Recipe: Date Nut Bread (dates and nuts soaked together)

Breads - Muffins, Quick Breads
DATE NUT BREAD

1 cup dates, chopped
3/4 cup nuts, chopped
1 1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup shortening
3/4 cup boiling water
2 eggs
1/2 tsp. vanilla
1 cup
1 1/2 cups all-purpose sifted flour

Combine dates, nuts, baking soda and salt into mixing bowl. Add shortening and 3/4 cup boiling water. Allow to stand for 15 minutes. Stir to blend.

Beat eggs slightly. Add vanilla. Stir in the sugar and sifted flour. Add to date mixture. Do not overmix. Place in greased 9x5x3-inch loaf pan.

Bake 1 hour in a 350 degree F oven. When done, toothpick inserted in center will come out clean. Cool before removing from pan.

Loosen sides with a spatula. For perfect slicing allow the loaf to cool for several hours before slicing.

Hi Debbie,

I'm not sure if this is the exact recipe you're looking for, but it calls for soaking the dates and nuts together as you described.
