BROCCOLI SUPREME
1 bunch of broccoli, cut in quarters
1/2 cup 4C Bread Crumbs (dry, seasoned or plain)
1/4 cup broccoli cooking water
4 eggs
Put broccoli into boiling water and cook for 20 minutes and drain,
saving 1/4 cup of the cooking water.
Arrange broccoli in rectangular dish and sprinkle bread crumbs on top.
Into the reserved broccoli water, beat eggs and pour over broccoli.
Put into preheated 450 degree F oven and bake until top is brown.
Makes 6 servings
