BRUNSWICK STEW
1 medium-size onion, chopped
1 tbsp. fat or oil
2 cups cooked or canned tomatoes
2 cups cooked or canned lima beans
2 cups cooked or canned corn
2 cups cut up canned chicken or turkey
Salt and pepper to taste
Cook onion in fat or oil in large pan until tender.
Drain vegetables and add water to vegetable liquid to make 2 cups. Add to onion.
Add drained vegetables and remaining ingredients and heat just to boiling.
Hi Jesse,
This isn't exactly the recipe you asked for but if you can't find that recipe you may want to try making this then, when it's done, lower the heat and stir in some light cream and let it simmer to the thickness you like (your Mom may have used evaporated milk if you remember her pouring in a canned milk).
