Recipe: Butternut Squash Casserole (with croutons and cooked chicken or turkey)

1/2 cup chopped onion
2 tbsp. butter or margarine
2 1/2 cups herb seasoned croutons
1/2 tsp. salt
1/4 tsp. pepper
1 cup chicken broth
3 cups cooked, mashed butternut squash
1 1/2 cups cooked, cubed chicken or turkey
1/2 cup shredded sharp American cheese
Saute onion in butter until tender.
Stir in croutons, salt and pepper. Add broth and toss. Combine croutons mixture with squash and chicken. Place in casserole.
Bake in 350 degree oven for 30 minutes.
Sprinkle with cheese and bake an additional 15 minutes.
FREEZE AHEAD INSTRUCTIONS:
Casserole can be frozen and baked later. Bake frozen casserole at 400 degrees for 1 hour. Top with cheese and bake additional 15 to 20 minutes.
