Hubbie says I make the best Caesar ever. I have made a few adjustments for health reasons, but this is my simple recipe.
Caesar Salad
Mash
1 large clove garlic with 1 tsp Kosher salt
Add
1/4 tsp cayenne pepper
1 healthy dash Worcestershire sauce
juice of one lemon
Mash some more.
Gradually whisk in, in a fine stream, a fruity extra virgin olive oil, about 1/2 cup. For dietary reasons I use only a third and it tastes great. You could use a blender or processor, but if you do, take out the garlic pieces. Otherwise the garlic flavor will overwhelm.
Wash and rinse
2 heads of romaine
Hand rip them into approximately 1-inch lengths. Spin in the salad spinner and chill until serving time.
When ready to serve, Put the dressing in the bottom of the salad bowl. Put the romaine pieces on top. Over this put 1 slice of dark toast cut into 1/2 inch squares and a 1/4 cup of REAL parmesan, no green box! Give it all a toss with rubber spatula so you can pick every little bit up from the bottom. Serve immediately.
If desired one can add anchovies to the salt/garlic mash. I like them, but hubbie's diet prevents using them. This salad is great without them, too! Enjoy.
