Recipe: Apricot Chicken Salad

APRICOT CHICKEN SALAD

1 large precooked barbecued chicken (from the grocery store is fine)
1 cup chopped dried apricots
1/2 cup sour cream
4 tbsp. honey mustard
1 tbsp. prepared horseradish
dash salt, dash white pepper, and dash black pepper

Separate the chicken meat from the skin and bones (discard skin and bones). Chop the chicken meat into bite-size pieces.

In a medium bowl, mix the chicken meat with chopped apricots, sour cream, honey mustard and prepared horseradish. Season with salt and pepper. Serve.

Servings: 6
