Recipe: Cakes (5)

Misc.
Hi Maxine,

Here's a couple.

Joe

DIRT CAKE
2 sm. instant vanilla pudding (dry)
1 (20 oz.) can crushed pineapple with juice
3 c. marshmallows (colored)
1 (12 oz.) Cool Whip
1 c. chopped pecans or slivered almonds
1 c. coconut
5 bananas, sliced
Maraschino cherries
1 lb. crushed Oreos or Hydrox (can use 3/4 pkg.)
Mix pudding and pineapple together. Add remainder of ingredients (except cookies) and mix together. Put in flower pot; top with crushed cookies and put a dry flower arrangement in center. Chill. Serve with garden scoop.

RITZ CRACKER FRUIT CAKE
1 lb. Ritz crackers, crumbled
1 lb. candied pineapple
1 lb. candied cherries
1 lb. marshmallows
1 box seedless raisins
4 c. chopped pecans
1 c. walnuts
1 tall can Pet milk
7 oz. flaked coconut
Cook marshmallows and milk until melted. Pour over other ingredients that you have mixed together in a very large mixing bowl. Mix all together and mash down in an oblong pan, 13x9x3 inch lined with waxed paper or into paper-lined loaf pans. Refrigerate one week. Then it can be frozen in slices. Good!

ICE BOX FRUIT CAKE
4 lg. boxes vanilla wafers, crushed
1 lb. candied pineapple, chopped
1 lb. candied cherries, chopped
1 or 1 1/2 qt. pecans pieces
1 lg. bag flaked coconut
1 lg. bag miniature marshmallows
2 cans condensed milk
Mix all ingredients until they stick together. Roll into logs and wrap each log in tin foil. Keep in refrigerator. Can be frozen. Slice to serve.

STUFFED ANGEL FOOD CAKE
1 angel food cake, baked & cooled
1/2 pt. whipped cream
Sliced toasted pecans
Maraschino cherries, drained
Pineapple chunks, drained
Small marshmallows
Coconut, optional
Turn out cake and carefully slice 1 inch off top. With 2 forks, carefully pull out center of cake in little pieces, leaving sides and center about 1 inch thick. Add little cake pieces to remaining ingredients. Lightly pack into cake shell and replace top. Ice with 1 pint whipped cream to cover.

MICROWAVE PINEAPPLE DESSERT
16 oz. can crushed pineapple
1 1/2 c. miniature marshmallows
1/2 box of Yellow cake mix dry or 1 box Jiffy Yellow cake mix
1/4 c. melted butter
1/2 c. coconut
1/2 c. pecans
Layer as written, cook in microwave 12 minutes full power. Can be served warm or cold. Serve plain or with ice cream or Cool Whip.
