Hi Stephanie, If you have tons of tomatoes and dont know what to do with them, try this:
cut an X on the tomato and drop in hot water for about 1 min. They peel easier that way. Let cool or dunk in cold water. Peel tomatos. You can place tomatoes, whole or sliced, in jar add garlic cloves to taste, fresh basil and some water to cover. You can also add chopped zucchini if you like. Process in hot water bath for at least 55 min.
Or you can place tomatoes in a pot and cook on medium, use a hand blender to pulverize. Let cook for about 25 minutes. Place in jars and process for 30 minutes. These dont need to process as long since you cook them first.
If you have leftover veggies you can add to the tomatoes and make V-8. Hope this helps.
