NUTLESS PECAN PIE
1 (9 inch) unbaked pie shell
FOR THE FILLING:
1 cup brown sugar, packed
2/3 cup granulated sugar
2/3 cup rolled oats (not instant)
2/3 cup coconut (angel flake or shredded)
3 eggs, beaten
3 tablespoons melted butter
1 teaspoon vanilla
Combine all ingredients for the filling. Pour mixture into pie shell.
Bake one hour in 350 degree F oven.
Serve warm or cold with whipped cream or vanilla ice cream.
