Recipe(tried): Spaghetti Sauce

Spaghetti Sauce
Yield 4 pints

3 lbs tomatos (7-9 average) cored, chopped
1 large onion, chopped
5 cloves garlic, minced
Cook onion and garlic in 2 Tbsp oil, I used olive

1 Tbsp basil
2 Tbsp parsley
1 Tbsp oregano
2 Tbsp sugar
1 (12 oz) can tomato paste
1 cup water
1 1/2 tsp salt
1/4 tsp pepper

In blender, chop tomatoes with skins on. Add to onion-garlic mix; add spices. Cook 1 1/2 hours or longer till desired thickness is reached.

Note from Linda Lou,WA: This spaghetti sauce would need to be pressure canned to be safe from botulism. Process for time for the vegetable with the longest processing time.
