Catsup
Source: Pickles, Relishes and Chutneys
UC Publication #4080
Yield: 4 pints

Ingredients
18 pounds tomatoes or 7 quarts puree
3 tablespoons salt

2/3 cup sugar
1 tablespoon paprika
1/4teaspoon cayenne pepper
1 tablespoon dry mustard blended with a little tomato juice to prevent lumping

Tie in a bag
1 tablespoon whole black pepper
1 tablespoon whole allspice
1 tablespoon mustard seed
4 bay leaves
2 cups vinegar

Process
If fresh tomatoes are used, scald and peel. Cook tomatoes until soft, then press pulp through a sieve to remove seeds. Add all remaining ingredients except vinegar to the puree. Cook until thick, about 1 hours. Add vinegar during last 10 to 15 minutes of cooking. Remove spices. Pour into clean, hot jars. Seal. Process in a simmering water bath for 10 minutes.
