You are able to safely can them in plain water if you want. However, they will be much softer and not as flavorful. You process them just as any other cherry in the Ball Blue Book. I think you have Bernadin, which would be the same.
I am also diabetic. I use a light syrup. I was taught if I use a light syrup I can still eat them without rinsing them off. Sugar helps keep them more firm.
I use 1 cup sugar and 4 cups water.
If you use any more sugar you can rinse them and eat them.
Using sugar substitutes is not that great. They taste chemical and also some sweetners turn bitter when you process them.
