PORT WINE APPLE BUTTER
1 large bottle of Port wine
1 quart water
2 quarts peeled, sliced, cooking apples
1 1/2 cups sugar
1/2 tsp cinnamon
1/4 tsp each, cloves, allspice, and salt
Heat wine and water to boiling in a large kettle; add apples and cook slowly, stirring often, for 1 1/2 to 2 hours, or until mixture starts to thicken.
Add sugar, salt and spices; cook rapidly, stirring constantly, until thick enough to spread.
Store in refrigerator. Freeze for longer storage.
Makes about 1-1/2 quarts
