Recipe(tried): Carribean Island Chicken

Hello Everyone,

I stole a few minutes while everything is cooking in the kitchen and came on-line to post this. This is a very tasty and aromatic chicken recipe with a disinctive "island" flavor. Coming from Cuba 40 years ago as a 4 year old has not dimmed my "latin" taste buds...my Mama is a fabulous cook as are all the women in our family, thus we tend to marinate our meats in herbs, garlic, sour orange and lime juice to make a succulent dish.

CARRIBEAN ISLAND CHICKEN

6 boneless, skinless chicken breasts halves
1/3 cup orange juice
3 tblsp. canola oil
3 tbls. honey
1/4 tsp. ground red pepper
1 tblsp. ground coriander
2 garlic cloves, minced
3/4 tsp. dried basil
1/2 lime
3/4 tsp. dried parsley
1 Hefty freezer zip-lock bag
2 tablsp. veg. oil

Rinse the chicken and pat dry. Place on a plate and squeeze lime juice over and sprinkle with coriander.

In a zip-lock freezer bag, pour in the orange juice, canola oil, and honey. Add the red pepper, basil, parsley, garlic and close the bag and knead to blend well. Add the chicken and close the bag and knead a bit to coat well.

Put the bag in a bowl in the fridge and marinade for 6-8 hours. Drain, reserving the marinade.

Brown the chicken in the veg. oil in a skillet. Drain and arrange the chicken in a glass baking pan, pour marinade over and bake at 350 for 25 mts. Serve hot or cold.

Great with mashed potatoes and green beans or rice pilaf and broccoli and carrots.
