Hello Everyone,

Tonight for dinner we had Carribean Island Chicken, Carrot Souffle, Italian Green Beans, Farmstand Fresh Sliced Tomatoes with Dressing, and Ginger-Almond Iced Tea.

This chicken dish is very aromatic and flavorful as well as "no mess". I made everything within 1 hour (remember the chicken has to marinate overnight). This chicken will make you think you are dining in Cuba under the swaying palm trees...it is also as delicious cold. Enjoy!!

CARRIBEAN ISLAND CHICKEN

6 boneless, skinless chicken breast halves
1/3 c. orange juice
3 T. canola oil
3 T. honey
1/4 t. ground red pepper (more if you want to kick up the heat)
1 T. ground coriander
2 garlic cloves, minced
1/2 lime
3/4 t. dried basil
1/2 t. salt
3/4 t. parsley
1 Hefty freezer zip-lock plastic bag
2 T. canola oil for frying

Rinse the chicken and pat dry. Set on a plate and squeeze the lime juice over and sprinkle coriander on them.

In a zip-lock bag, pour in the orange juice, canola oil, and honey. Add the red pepper, basil, parsley and garlic. Close bag and knead to mix well.

Add the chicken and knead to coat well. Put the bag inside a bowl inside the fridge. Marinate for 6-8 hours, turning the bag every time you open the fridge to get something.

Next day, drain, reserve marinade. Brown the chicken in the 2 T. of canola oil, on both sides in a skillet. Arrange meat in a glass baking dish and pour the marinade over. Bake at 350 for 25 mts. Serve hot or cold.

CARROT SOUFFLE

1 lb. carrots, peeled and sliced
salt to taste
1/2 c. butter, melted
1/2 c. sugar
1 t. baking powder
3 T. flour
3 eggs
1 t. vanilla
1/4 t. Spice Blend*

*Spice Blend is a jar of spice I bought at Pier One a couple of years ago. When I went back to get more, they were out. Luckily I keapt the jar with the ingredients and now I make my own. It is simply equal portions grounded of:
ground coriander, ground cloves, ground cinnamon, sugar, aniseed, fennel seeds, and ground ginger. I ground it in the coffee machine grounder. It is fabulous.

Cook carrots in small saucepot in salted water covered til tender. Drain. Combine with butter in a blender or food processor and process till smooth.

Combine the sugar, baking powder, flour, eggs and vanilla in a bowl. Mix well and add to the pureed carrots and mix well.

Spoon mixture into a greased baking dish and bake at 350 for 45 mts.

ITALIAN GREEN BEANS

2 cans The Allens Sunshine Brand Cut Italian Green Beans
1 slice onion, chopped
1 slice red bell pepper, chopped
1/2 garlic clove minced
salt and pepper to taste

Put all ingredients in a saucepot and heat over med. until done, about 25 mts.

FARMSTAND FRESH SLICED TOMATOES

I simply sliced these beauties and drizzled over Paul Newman's Own Olive Oil and Vinegar Dressing, ummmm.

GINGER-ALMOND ICED TEA

yields 3 qts.
1 c. boiling water
5 reg. size tea bags
1 c. sugar
4 c. water
1/2 c. lemon juice
1 t. vanilla extract
1 t. almond extract
1 qt. ginger ale, chilled
Pour boiling water over tea bags, cover and steep 5 mts. Remove tea bags, squeezing gently. Stir in sugar and next 4 ingredients, chill. Stir in ginger ale just before serving. Serve tea over ice.
