Carrot Raisin Salad
A great brunch recipe:
Makes 6 servings, 1/2 cup each

6 med. size carrots
1 cup raisins
1/4 cup mayonnaise or salad dressing
Lemon juice if you desire

Finely chop or shred carrots. Mix all ingredients well.
