Recipe: Carrot Ring with Peas (not Dear Abby's) for Hubcitypam

CARROT RING WITH PEAS
(not Dear Abby's)

1 tbsp. shortening for mold
1/2 c. plus 3 tbsp. corn flake crumbs
1 lb. cooked mashed carrots
2/3 c. milk
1 c. shredded Cheddar cheese
1/3 c. margarine or butter, melted
3 tbsp. finely chopped onions
1 tsp. salt
1/8 tsp. pepper
Dash of cayenne
1/8 tsp. nutmeg
2 eggs
Parsley for garnish

Grease a 5-cup ring. Sprinkle with 3 tablespoons corn flake crumbs.

Mix all ingredients except eggs. Beat eggs 1 minute until light yellow. Add to carrot mixture. Spoon in mold.

Bake 1 hour at 350 degrees. Cover with tin foil for 30 minutes after baking. Then invert on platter.

Serve with peas in center. May make 2 hours ahead of time.
