DEAR ABBY'S CARROT RING MOLD
1 cup bread crumbs (to coat mold)
2 eggs, beaten
1 cup flour
1/2 cup firmly packed brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
Dash salt
1 1/4 cup grated carrots
3/4 cup shortening
Cooked peas (fresh, if possible), for serving
Heat oven to 350 degrees F. Generously grease 1 quart ring mold and coat thoroughly with bread crumbs in order to allow contents to "fall out" easily.
In large bowl, beat eggs. Add flour, brown sugar, baking powder, baking soda, and salt; mix well. Stir in carrots and shortening; mix well. Spread carrot mixture evenly in ring mold. Place mold in pan of 1 inch deep hot water.
Bake at 350 degrees F for 50-60 minutes.
Unmold onto serving plate; fill center w/fresh hot peas. Serve immediately.
Recipe may be doubled and baked in 2 quart casserole at 350 degrees F for 1 hour and 20 minutes.
