Casata Cake

I have worked in a family-owned Italian bakery as a cake decorator for more than twelve years. In that time I have learned to make cassata cakes and Italian rum cakes.

The way it is done there is as follows:

Yellow cake layers are split in half and brushed with a mixture of rum and water. A ricotta cheese filling (cannoli filling) is spread on that layer. The second layer is coated with rum-water and either a layer of chocolate pudding or another layer of ricotta is spread. Place the third split layer, soaked in rum-water on top of the second. Frost the cake with whipped cream or a non-dairy whipped topping.

Splash toasted almond slices on sides.

If you can decorate, pipe cream borders and flowers. Enjoy!
