Recipe: Cannoli Fillings, Cream, Cheese Filling with Fruit

Here are a couple Cannoli fillings that you might like. Enjoy!

CANNOLI FILLING 1.
1/2 cup shortening
1/2 cup margarine
1 cup sugar
1 egg white
2 tsp. vanilla
1/2 cup hot milk
Cream together shortening and margarine; add one cup sugar and beat well. Add egg white and vanilla; beat thoroughly. Add hot milk, one tablespoon at a time, and beat until creamy.

CANNOLI FILLING 2.
1 cup ricotta cheese
2/3 cup superfine sugar
1 tbsp. orange flower water or sweet liqueur (Maraschino, Strega or Amaretto)
1/4 cup glace orange and citrus peels, cut into tiny dice
2 ounces sweet chocolate, chopped fine
1 tbsp. powdered cocoa
Place ricotta cheese (if lumpy, strain through a sieve)in a bowl. Stir in superfine sugar, orange-flower water or sweet liqueur. Mix well. Add glace orange and citrus peels and sweet chocolate; mix well. Divide mixture into two parts. Keep one as is and stir in 1 tbsp. powdered cocoa into the other.
Cover and refrigerate until ready to use. This mixture is for filling two variations of the cannoli cookies.

CANNOLI FILLING 3.
2 cups ricotta cheese
1 cup whipped cream
3 tbsp. sugar
2 tbsp. candied fruit, diced small
1 1/2 tsp. vanilla
Put ricotta cheese in a bowl and fold in whipped cream, adding sugar as you fold. Chop fruit into tiny pieces or slivers. Fold in fruit and vanilla.
Refrigerate.
