Recipe: Cashew Clusters / Coconut Clusters

Desserts - Candy, Chocolate
This recipe is from a 1986 Betty Crocker cookbook. Coconut is one of the variations. Maybe this will be a good starting point to help with the proportions.

CASHEW CLUSTERS

Heat 1 teaspoon shortening and 1 package (6 ounces) semisweet chocolate chips in 2-quart saucepan over low heat, stirring constantly, until chocolate is melted and mixture is smooth; remove from heat. Stir in 3 cups salted cashew nuts, macadamia nuts, or peanuts. Drop mixture by teaspoonfuls into mounds onto paper-covered cookie sheet. Refrigerate until firm, about 30 minutes. Cover tightly and refrigerate any remaining candies. About 3 dozen candies; 100 calories per candy.

Coconut Clusters: Substitute 3 cups flaked coconut for the cashew nuts.

Raisin Clusters: Substitute 3 cups raisins for the cashew nuts.

Raisin-Nut Clusters: Substitute 1 1/2 cups raisins and 1 1/2 cups salted peanuts for the cashew nuts.
