Recipe(tried): Catherine.....Chocolate profiteroles.....

Hi Catherine, I found this in a new cook book I bought last night. The recipe
I already have is at work. I'm going by there tomorrow so I'll get it and
see how different it is from this one. If it is different, I'll post it tomorrow.I hope this helps.The book is The New Baking Book ..Better Homes
and Gardens..
Chocolate Cream Puffs
1 cup water
1/2 cup butter
1/8 tsp. salt
1 cup all-purpose flour
3 TBSP. unsweetened cocoa powder
2 TBSP. sugar
4 eggs

In a medium saucepan combine water, butter, and salt. Bring to boiling. Combine the flour,cocoa, and sugar. Add flour mixture all at once, stirring vigorously.
Cook and stir until mixture forms a ball and cleans sides of pan.
Remove pan from heat. Let cool for 10 minutes. Add eggs, one at a time, beating well wit a wooden spoon after each addition.

Drop pate au choux by heaping TBSP. or pipe from a pastry bag fitted with a
1/2" plain tip into 12 mounds 3" apart onto a greased baking sheet.
Bake in a preheated 400 F. oven for 30-35 minutes or until golden. Remove from
baking sheet ; cool on a wire rack. Cut off tops from each puff ; remove any
soft dough from inside. Fill as desired.
This recipe makes 12 large cream puffs. For profiteroles ( mini cream puffs )
make the mounds smaller and adjust the cooking times.

The other recipe I have is different, it has two oven temperatures.I'll post
