ONION PIE
1 large onion, chopped
1 to 2 tbsp. margarine
1 ( 8 1/2 oz.) package Jiffy Corn Muffin Mix
1 (8 1/4 oz.) can cream-style corn
1/3 cup milk
1 cup sour cream
1/4 tsp. salt
1/4 to 1/2 tsp. dill weed
1 cup shredded Cheddar cheese
Preheat oven to 375 degrees F.
Saute onion in margarine until softened; set aside.
Beat together muffin mix, corn and milk; pour into greased pie plate.
To sauteed onion in pan, add sour cream, salt and dill weed; stir well. Pour over crust mixture.
Bake at 375 degrees for 15 minutes. Top with Cheddar cheese and bake 15 to 20 minutes longer. Center of pie will not be set when removed from oven. Cool 15 minutes before cutting.
