Recipe: Sweet Onion Relish (with cauliflower and golden raisins) (microwave)

SWEET ONION RELISH

"Serve this quick and delicious relish as a condiment with meatloaf, pork or chicken."

1 large sweet onion (about 8 ounces), very thinly sliced
1 cup coarsely chopped cauliflower
1/2 cup golden raisins
3 tablespoons tomato paste
2 tablespoons light brown sugar
1 tablespoon soy sauce
1 tablespoon white wine vinegar
1 teaspoon Worcestershire sauce
1 teaspoon white peppercorns
1 teaspoon salt
Freshly ground black pepper, to taste
1 cup water

Combine all ingredients in a 2-quart microwave-safe casserole dish, and stir well.

Cook, covered at full power for 5 minutes. Stir, and cook another 5 minutes.

Allow the relish to cool to room temperature, then refrigerate up to three days.

Makes 2 1/2 cups
