Recipe(tried): Taste like Jim and Nick's Muffins

Breads - Muffins, Quick Breads
TASTE LIKE JIM AND NICK'S MUFFINS

1 1/2 cup self rising flour
1 cup powdered sugar
1 cup shredded mild cheddar cheese
2 tsp baking powder
3/4 cup milk
1 egg, beaten
4 tbsp butter, softened
2 tbsp lemon juice*
1/4 tsp vanilla

Combine all ingredients and pour into greased muffin pan.

Bake at 400 degrees F for approximately 20 minutes. (I also top them with a little butter right out of the oven.)

*The lemon juice just makes them a little bigger and a little lighter. You can not taste them lemon after they are cooked.

NOTES:
I tried 1 1/2 cups of powdered sugar, they were too sweet so went back to 1 cup. Also tried with 1/2 tsp vanilla. That was also too much, so again I went back to 1/4 tsp.

Makes 12 muffins
