I identified a source for Cheddar Cheese Powder in the Spice House site. Here are the following recipe using the referred powder:
Cheese Corn
Notes from the source: I use the cheddar cheese powder on my air-popped popcorn to save on calories. Also, I've found the butter flavored pan sprays help it to stick to the popcorn; again less calories.
1/4 cup popcorn kernels
1 can butter flavor spray
1 jar cheddar cheese powder
(1/4 cup popcorn makes large bowl)
As the popcorn comes out of popper, spray the pan spray on it in spurts. When the bowl is full, sprinkle cheddar cheese powder on top. It will fall through and stick to the spray. Great!

Cheddar Cheese Popcorn

Yield: 4 servings
3 tablespoons melted butter
1/4 cup cheddar cheese powder, plus 1 tablespoon
1/4 teaspoon mustard powder
1/4 teaspoon cayenne pepper
4 cups popped popcorn
Salt and pepper
In a large bowl, combine the butter, cheddar cheese powder, mustard powder, cayenne pepper and the popcorn. Season with salt and pepper, to taste and toss to combine. Serve immediately.
HEALTHY MACARONI AND CHEESE
(using powdered cheddar cheese)
8 oz. cooked & drained whole wheat pasta elbows or shells
1 1/2 c. low-fat cottage cheese
3 T. powdered cheddar cheese
3/4 c. no fat sour cream
1 can evaporated skim (no fat) milk
1 c. shredded low fat sharp cheddar (or veggie cheddar cheese)
salt and freshly ground pepper to taste
2 egg whites & 1 whole egg
2 Tbsp. grated fresh onion
1 tsp. Worchestershire sauce
1 tsp. dry mustard
1/4 tsp. ground white pepper
3 Tbsp. Fresh grated parmesan cheese
Sweet Hungarian paprika
Preheat oven to 350 degrees and spray 2 quart casserole.
In food processor blend cottage cheese, eggs, powdered cheese & sour cream. NOTE: If you don't have powdered cheese add an extra 1/2 c. sharp cheddar.
Transfer to bowl and add all but macaroni and paprika.
Stir in macaroni. Correct for salt and pepper. Sprinkle top with paprika.
Put baking pan with 1" of boiling water in oven. Set casserole inside this pan. (Yes, it's like making a custard, but if you don't do this it won't win the blue ribbon prize!)
Bake covered for 30 minutes, then uncover and bake until done -- about another 30 minutes. Test with a clean butter knife for "doneness".
SERVES 4 as a main course.
