Recipe: Cheese Stuffed Mini Meatloaves (using muffin pan)

CHEESE STUFFED MINI MEATLOAVES

1 pound lean ground beef or ground turkey
3/4 cup milk
1/2 cup uncooked quick oats
1 egg, beaten
1 teaspoon salt
12 cubes cheddar cheese
FOR THE TOPPING:
1/4 cup packed light brown sugar
2/3 cup ketchup

Preheat oven to 350 degrees F. Coat 12 mini muffin pan cups with a little bit of non-stick cooking spray.

Place ground beef, milk, oats, egg and salt in a large bowl. Mix together well. Place about 1/4 cup of the mixture in the palm your hand. Place one cube of cheese in the center of the meat mixture. Form the meat around the cheese to cover it, shaping into a small round. Place each in the prepared muffin cups.

To make the topping, combine light brown sugar and ketchup. Spread about 1/4 teaspoon of the topping evenly over each mini meatloaf. You just need a little bit, so you get that nice sweet flavor when you take your first bite.

Place on the center rack in the 350 degree F oven and bake for 30 minutes.

These are great as an entree, or you can them as an appetizer by plating them in these individual serving dishes.

Makes 12 mini meatloaves
