CHEESY BASIL TOMATOES
5 small white onions, peeled
1 tbsp. olive oil
1 large tomato
1/4 cup fresh basil, diced
2 tbsp. shredded cheese
1 tbsp. molasses
1 tbsp. chocolate
1 tsp. butter
Place onions in saute pan over medium heat in the olive oil and cook for 10 minutes, or until soft.
While onions are cooking, slice top 20% off top of tomato. With knife or spoon, remove all insides of tomato to dish, leaving only tomato shell.
Dice reserved insides from tomatoes and mix with the basil.
Bake tomato shell in a 350 oven for 7 minutes.
After onions are soft, pour tomato-basil mixture into saute pan with the onions and heat for 5 minutes.
When onions and tomato shell are done, add ingredients from saute pan into tomato shell.
Bake for 5 minutes more.
Remove from oven, sprinkle 2 tbsp shredded cheese on top.
Bake for a few minutes until cheese melted. Remove, to plate.
In separate pan, add molasses, chocolate and butter and melt.
Drizzle tomato with chocolate sauce and serve.
