CARAMELIZED CARROTS WITH ONION AND BACON
1 pound carrots, scrape and slice on the diagonal
3 slices bacon
1 small chopped onion
3 tablespoon packed brown sugar
1/2 teaspoon salt
freshly ground pepper to taste
Cook carrots until crisp-tender about 15 minutes. Drain.
Cook bacon until crisp Drain and reserve 1 tablespoon drippings. Crumble bacon and set aside.
Saute onion in bacon drippings until soft.
Add brown sugar, pepper and carrots; cook until thoroughly heated.
Sprinkle with bacon and serve.
