Recipe: Onion-Potato Soup (Serves 2)

ONION-POTATO SOUP

2 tbsp butter
1 small onion sliced thin
1 medium potato, peeled and thinly sliced
1 cuo hot chicken broth
2 peppercorns, crushed
2 whole allspice, crushed
1/4 cup finely chopped celery tops
2 tbsp heavy cream
salt and ground pepper to taste

Melt butter in saucepan. Add onion and potato and saut , stirring, for 5 minutes.

Stir in the chicken broth, peppercorns and allspice. Bring to a boil, cover and simmer for 30 minutes, or until potatoes are tender.

Beat soup with a whisk until potatoes are broken up into tiny pieces.

Add the celery tops and the cream. Heat and season to taste with salt and pepper.

Makes about 2 cups
