Recipe(tried): Chevy's Restaurant Smoky Tortilla Soup (discontinued in 2001)
SoupsI have Chevy's Tortilla Soup recipe! This is the one they discontinued in 2001. They have since replaced it with a totally different recipe. This one below is so delicious!
CHEVY'S RESTAURANT SMOKY TORTILLA SOUP
1 tablespoon canola oil
2 cups chopped white onion
2 teaspoons chopped garlic
1 teaspoon chipotle peppers in adobo*
1/2 cup tomato paste
4 cups chopped tomatoes
2 tablespoons chopped fresh cilantro
6 cups chicken stock
2 tablespoons fresh lime juice
1 teaspoon salt
1/2 teaspoon cracked black pepper
FOR SERVING:
diced cooked chicken, tortilla strips, diced white onions, fresh cilantro and lime wedges.
Saute the onions and garlic in the canola oil until soft.
Add the chipotle peppers and tomato paste and saut an additional 5-minutes.
Add the remaining ingredients, bring to a boil and simmer for 10-minutes. Cool completely.
In batches, blend until smooth.
Place in a sauce pan, and bring back to a boil. Lower heat and simmer for additional 15-minutes.
Serve with diced cooked chicken, tortilla strips, diced white onions, fresh cilantro and lime wedges.
*These chiles are readily available in most large supermarkets (you can find them in small cans in the Ethnic Foods isle)
