Recipe: Chewy Fruit and Walnut Bars (Betty Crocker Cookbook)

CHEWY FRUIT AND WALNUT BARS

1 cup packed brown sugar
1/2 cup margarine or butter, melted
1 teaspoon grated orange peel
1/4 cup orange juice or pineapple juice
1 teaspoon vanilla
2 eggs
2 cups all-purpose flour*
2 teaspoons baking powder
1 (6 ounce) package diced dried fruits and raisins
3/4 cups chopped walnuts

Heat oven to 350 degrees F. Grease rectangular pan, 13x9x2-inches.

Mix brown sugar, margarine, orange peel, orange juice, vanilla and eggs. Stir in flour and baking powder. Stir in dried fruits and walnuts. Spread batter in pan.

Bake 20 to 25 minutes or until wooden pick inserted in center comes out clean; cool.

Sprinkle with powdered sugar if desired. Cut into (2 x 1 1/2-inch) bars.

*If using self-rising flour omit baking powder.

Makes 32 bars
