EASY COUNTRY GRAVY FROM TEXAS
Cook a pound of bacon or pork sausage. Take meat out of pan.
Sprinkle enough flour on top of grease in pan to cover. Stir with whisk to loosen bits and combine flour into grease, making sure you don't put too much flour. The roux should be stir-able.
Now you start to add milk, a cup at a time. Depending on how much flour you started with, keep adding milk and whisking, turn down flame. Add some seasoning like powdered sage, or poultry seas, if you like, lots of black pepper is good.
You can add the meat back into the gravy and simmer for a while.
Great to serve over biscuits. This is all you need to get by!
