Recipe: Chi Chi's Chili Con Queso for Apryl

Appetizers and Snacks
Chile: Chi Chi's Chili Con Queso

1 pound Velveeta
1 4 ounces can chiles
4 ounces chopped pimentos
Tabasco sauce, to taste
half and half- equal amt. to melted cheese

Take a pound of Velveeta and melt it until it becomes stirable. I use a microwave for this. Combine an equal amount of half and half and mix thoroughly. Add one 4 oz can of chilis and an equal amount of pimientos. Microwave again until the mixture is hot. I like a little more spice so I add a dash or three of Tabasco at this point but you do as you like. Pour into small bowls and cover with plastic wrap and place in the refrigerator overnight. Don't leave this step out. Take a bowl out and place into microwave, heat, stir and enjoy.
