Recipe: Chick Pea Turnovers (cookies)

Hi again Peggy,

I think I've tracked down another of the recipes you're looking for. If you have time we'd love to hear about the results if you try these.

Chick Pea Turnovers (one fried recipe, one baked)

Date: 1997/02/12
I was given two recipes from an Italian lady who worked for us when we owned our bakery.

3 cups flour
1 egg
1/2 tsp. salt
6 tbsp. oil
1 tsp. sugar

Mix all together, adding enough water to form a dough that isn't sticky.
Knead until smooth.

1 can chick peas
1 small bar sweet chocolate
1/4 cup honey
1/2 cup chopped nuts
1/2 cup mixed fruit
1 tbsp. cinnamon

Drain peas and mix with remaining ingredients.
Roll dough. Cut into 2-inch squares.
Fill with teaspoon of filling.
Fold opposite corners over and seal. Fry to golden brown.

Chick Pea Cookies

1/2 cup butter
2 eggs
1/4 tsp. salt
3/4 cup sugar
1/2 cup canned milk
flour (as needed)

Cream sugar and butter.
Add eggs. Mix well.
Blend in milk.
Add salt and enough flour to make a stiff dough.

1 lb. chick peas, ground
1/4 cup cocoa
1/2 cup brown sugar
1 lb. ground nuts
1/2 lb. chopped milk chocolate
1/2 cup cottage cheese (unsalted)
1/4 cup honey

Mix all filling ingredients.
Roll dough and cut into 2-inch circles.
Fill with tablespoon of filling. Seal edges with fork.
Bake at 350 degrees for 20 minutes.
