Recipe(tried): Chicken and Broccoli Casserole and Peach Cobbler South

This delicious Chicken Chicken and Broccoli Casserole always seems to hit the spot. I obtained this recipe from my next door neighbor, the only difference is that I saute onions and garlic to go into it. It is always filling and sooo tasty!

I'm also in the mood for some Peach Cobbler like the one we enjoyed at Atwater's Soul Food Cafteria. This one is with canned peaches and it is yummy served with vanilla ice cream. Especially on a hot summer's evening, just as the sun is going down....this has to be one of summer's quintessential dessert!!

I wanted to make this casserole so that there would be leftovers for tomorrow night...we will be going to see "Cats" and you know how hungry one can get when you get home to nibble on something...the leftovers are always more delicious the next day.

Chicken and Broccoli Casserole
Serves 6

4-6 chicken breasts
2 (10 oz.) pkgs. frozen broccoli spears
1 medium onion, chopped
3 garlic cloves, crushed
1 can mushroom soup
1 can cream of chicken soup
1 cup mayonnaise
1 tsp. lemon juice
1 tsp. curry
1 cup shredded sharp cheddar
1/2 c. seasoned breadcrumbs
1 small can water chestnuts, drained and chopped

Saute onion til it begins to golden, then add garlic and cook 2 more minutes. Cook chicken by immersing it in a saucepot of boiling water until tender. Drain and when cool enough, shred into large pieces and put onto bottom of casserole dish. Combine soups, mayonnaise, onions and seasonings. Pour over and top with cheese. Sprinkle breadcrumbs evenly over. Cook for 30-45 minutes til nice and bubbly and cheese has melted.

Peach Cobbler South
serves 6

1 large can (13 oz.) peaches, drained
1/2 c. peach syrup
2 T. lemon juice
1/2 c. light brown sugar, packed
1 c. Bisquick mix
2 T. white sugar
1/3 c. evaporated milk
2 T. butter
2 T. brown sugar
1/8 t. cinnamon

Combine peach syrup with lemon juice and light brown sugar and bring to a boil. Add peaches and remove from heat.

Combine bisquit mix, sugar and milk and blend well. Drop dough by teasponns into a buttered 8x8x2" glass baking pan. Pour on the hot peaches and syrup and dot with butter. Sprinkle brown sugar and cinnamon over. Bake at 450 for 20 minutes.
