Recipe(tried): Chicken and Cashew Stir Fry

This is the method I use with Great results.

Two chicken breast fillets diced into bite sized chunks
1/2 cup cashew nuts unsalted and unroasted
1/2lb mushrooms cut large one or leave small one whole
1 onion chopped into large pieces
3 tbs oyster sauce
salt
pepper
2 tbs peanut oil

Get wok very hot and smoking and then add 1 tbs oil and fry mushroom, cashew nuts and onion for approx 2 - 3 minutes, the cashew nuts will start to brown. Remove these ingrediant from the wok and place on a plate. Heat wok again and add rest of oil, when hot add diced chicken and fry until chicken goes white. Add precooked ingrediants, oyster sauce,salt & pepper. Cook until chicken is cooked through.
This is the quickest and tastiest method I have found.
If you have time marinade the diced chicken in Soy Sauce, Sesame oil and Rice wine for a couple of hours and this will add even more flavour
