Recipe(tried): Chicken and Rock Melon.

Chicken and Rock Melon.

Ingredients~
2 chicken breast filets -- diced
3 spring onions -- chopped (green onions)
2 cloves garlic -- chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/2 rock melon -- diced (or to taste)
2 tomatoes -- cut into 1/8ths
light oil
1/2 teaspoon cimmamon
1/2 cup apple juice
1/2 teaspoon basil
1/2 teaspoon mint OR thyme

Method~~
Heat a large pan and add the oil.
Place the diced chicken in hot oil and brown on all sides.
Add onion, garlic, salt and pepper.
Stir.
Add tomatoes, mint, cinnamon.
Stir to combine.
Add apple juice and basil.
Cook for 1 & 1/2 minutes.
Add rock melon.
Cover and heat through.
