CRAB ALFREDO PASTA PRIMAVERA
1 tablespoon olive oil (or vegetable oil)
1 cup diced zucchini
1 cup sliced fresh mushrooms
1/2 cup chopped sweet red pepper
1 teaspoon minced garlic
1/2 cup dry white wine (or chicken broth)
2 cups prepared Alfredo sauce
1 (8 ounce) package Louis Kemp crab delights, flake style
1 1/2 teaspoons lemon juice
1 teaspoon dried basil
Hot cooked penne pasta (for serving)
In a large saucepan, heat oil over medium high. Add zucchini, mushrooms and red pepper. Cook 1 to 2 minutes, stirring often.
Add garlic and wine. Stir in Alfredo sauce, crab delights, lemon and basil. Cook until heated through.
Serve over cooked pasta.
Makes 4 servings
