CHICKEN BREASTS WITH APPLE AND HERB DRESSING
4 (4 ounces each) boneless skinless chicken breast halves, rinsed and patted dry
Salt and freshly ground black pepper (to taste)
FOR THE STUFFING:
2 tablespoons butter or cooking oil
1 onion, peeled and finely chopped
1 celery rib, finely chopped
2 unpeeled cooking apples (such as Granny Smith or slightly green Golden Delicious), cored and coarsely chopped
1 cup applesauce
1/2 cup water
4 cups herb-seasoned stuffing (bread crumbs or cornbread-style)
Ground cinnamon
Preheat oven to 400 degrees F.
Season chicken breasts with salt and pepper; set aside.
Heat butter or cooking oil in nonstick skillet and saute onion, celery and apple until onions are just golden.
In mixing bowl, blend applesauce with water. Add sauteed vegetables and apples, then stuffing mix, stirring until blended. Spoon into greased oblong baking dish and top with chicken breasts. Sprinkle chicken lightly with cinnamon.
Bake 30 to 35 minutes or until chicken is done.
Makes 4 servings
