Recipe: Chicken Bundles of Love

This was made up by Sandy Hartley and Linda Hofacker for the Regis and Kathilee Valentines Show.

CHICKEN BUNDLES OF LOVE

2 whole chicken breasts (split, skinned and boned)
1/2 cup almond paste
8 oz mozzarella cheese, grated
1/2 cup bread crumbs
4 toothpicks
4 tbs. butter
1 garlic clove halved
1/2 cup sherry
pepper to taste
2 tbs. chopped parsley

Pound chicken breasts. Spread almond paste on each breast. Sprinkle evenly with cheese and bread crumbs. Then roll up each breast and secure with toothpicks. Melt butter in pan and saute garlic for 1 minute. Add chicken to pan and saute 1-2 minutes. Place bundles in oiled pan and bake at 350 degrees for 20-25 minutes. When done, add sherry to pan drippings mix and pour over chicken. Season with pepper & parsley to taste.
