Recipe(tried): Chicken Enchilada Casserole

Good morning!
I'm almost done with my spring break, and NOW the weather starts to turn nice! Oh, well, I miss my kiddos and I'm sure they'll have lots of stories to tell about their exciting adventures this week. I'm planning on finishing a couple little baby projects today, and I will post the crib sheet directions later. I'm almost done writing them down. And I'm so glad some of you checked out the Fly Lady! Isn't she wonderful??!!
For dinner tonight, I'm making some good old standbys. We're having:
Chicken Enchilada Casserole
Spanish Rice (I just use Zatarian's)
Banana Pudding

Chicken Enchilada Casserole

2 cups grated Cheddar Cheese
2 cups grated Mozzarella Cheese
2 TBSP. olive oil
1 large onion, diced
1 (4 oz.) can chopped green chilies
1 can cream of mushroom soup
4-6 large flour tortillas, each one cut into 6 pie shaped wedges
1 cup salsa, medium or hot
4 cups diced, cooked chicken

Mix the grated cheese together in a bowl. In a large frying pan, saute the onion in the olive oil until soft. Stir in the chilies, mushroom soup, and 1/2 of the cheese. Cook over low heat until the cheese is melted.
Lightly grease a 9X13 pan. Line the bottom of the pan with 9 of the tortilla wedges. Spread about 1/2 cup of salsa over the tortilla wedges. Spread about 2 cups of the diced chicken over that, and then pour 1/2 of the cheese sauce over that. Repeat the layers: tortillas, salsa, chicken, cheese sauce. Sprinkle the rest of the cheese on top of everything. Bake, uncovered, at 325 degrees for about 50-60 minutes. It should be bubbly when it's done. Let it stand for at least 10 minutes before you cut into it.

Banana Pudding

3 pkgs. instant vanilla pudding (3-1/2 oz. each)
5 cups of milk
1 (8 oz.) carton sour cream
1 (12 oz.) carton Cool Whip
2 boxes of vanilla wafers
12 to 15 bananas, sliced

(This makes a lot, so you can either put it in a big trifle bowl, or I make 2 glass 9X13 dishes from this, and send one to my neighbor who has 4 children. They gobble it up!)

In a large mixing bowl, whisk the pudding mix and milk till thick. Add sour cream and 1/2 of the Cool Whip. In either the trifle bowl or the 2 glass baking dishes, however you're making it, start layering the vanilla wafers, bananas, and pudding mixture. Top with some more Cool Whip and bananas, if you want. If you put bananas on top, sprinkle them with lemon juice first so they don't discolor.
