FREEZE AHEAD CHICKEN CHUNKS
6 boneless, skinless chicken breasts
1/2 cup butter, melted
COATING:
1 cup bread or cracker crumbs
1/2 cup grated parmesan cheese*
1/3 cup chopped walnuts
1 clove garlic, minced
1 tsp dried thyme
1/2 tsp dried tarragon
1/2 tsp salt
Cut chicken into strips than into cubes. Melt butter in a small bowl.
Mix all coating ingredients.
Dip chicken into butter, then into crumb mixture. Place in a single layer on baking sheet in freezer.
Once frozen put them in a ziploc bag and take out just what you need.
To serve:
Take chicken chunks out of freezer, no need to thaw, and bake at 400 degrees for 15-20 minutes or until golden brown.
*I omitted the cheese since my husband doesn't like it and added a little dash of garlic powder.
This makes tons of chunks and they go pretty far. You could also use chicken tenders as a timesaver, but they are more expensive. I keep these on hand now all the time!
