Recipe: Chicken Ole (using chicken breasts, picante sauce and yogurt or sour cream)

CHICKEN OLE

8 boneless, skinless chicken breast halves
1 tbsp ground cumin
2 cloves garlic, minced
1 large onion, sliced and separated into rings
3/4 cup picante sauce
1/2 cup reduced or non-fat plain yogurt or sour cream
1 tbsp flour
1 tbsp chopped fresh cilantro
Hot cooked rice (for serving)

Sprinkle chicken with cumin and brown in skillet coated with non-stick spray.

Add garlic and onion rings. Pour picante sauce over all. Cover and cook over low heat for about 30 minutes or chicken is done and juices run clear. Remove chicken from skillet and keep warm.

Combine yogurt and flour and stir into sauce in skillet. Do not boil! Pour over chicken. Serve chicken and sauce over rice.

Makes 8 servings
