Recipe: Roast Chicken with Asian Flavors (using ginger, lime, and fresh mint)

3/4 cup hoisin sauce
3/4 cup Chinese rice wine (Shaoxing wine)
1/3 cup soy sauce
2 tablespoons grated fresh ginger
2 tablespoons fresh lime juice
2 tablespoons packed brown sugar
1 tablespoon Asian sesame oil
1 1/2 teaspoons Chinese five-spice powder
1 teaspoon minced fresh mint
1 (3- to 4-pound) chicken, cut into 8 pieces
Combine all ingredients except chicken in large bowl. Stir well. Add chicken pieces and coat well with marinade. Let stand at room temperature 30 minutes. If you wish, you can marinate the night before (in the refrigerator).
Preheat oven to 450 degrees F.
Place chicken in baking dish, skin side up. Transfer marinade to small saucepan, bring to boil over medium heat, and cook 5 minutes.
Bake chicken, basting occasionally with marinade, until chicken is opaque throughout.
