Recipe: Chicken Piccata

This recipe doesn't call for them but you said w/ peppercorns and it's usually served w/ capers. You can add them as your taste desires.

Chicken Piccata

4 boneless chicken breasts, skinned & halved
1/2 c. flour, seasoned w/ pepper
2 T. butter
1/4 c. olive oil
6 T. fresh lemon juice
3 T. finely chopped parsley

Dust chicken breasts lightly w/ seasoned flour. Heat butter and oil in 2 large frying pans. Add half the chicken breats to each pan. Cook quickly over high heat for 4-5 minutes, until chicken is golden brown on both sides. Transfer chicken to warm platter.

Add lemon juice to one of the pans. Stir to deglaze pan and remove bits from bottom. Pour sauce over chicken breasts. Garnish w/ lemon slices and serve.

Also, this recipe doesn't call for it but I usually pound the breasts to about 1/4" thick like when making chicken marsala. Otherwise I don't think the cooking time is accurate enough. Couldn't locate my normal recipe.
