Recipe: Hot Sesame Noodles

HOT SESAME NOODLES

6 ounces angel hair pasta, uncooked
FOR THE PEANUT BUTTER SAUCE:
3 1/2 tablespoons creamy peanut butter
3 tablespoons brewed tea
3 tablespoons rice vinegar
2 tablespoons low-sodium soy sauce
1 tablespoon minced fresh ginger
2 teaspoons chili oil
1 teaspoon honey
1/2 teaspoon sesame oil
TO SERVE:
2 tablespoons sesame seeds, toasted
3 tablespoons sliced green onions

Cook pasta according to package directions, omitting salt and fat; drain.

Meanwhile, combine the ingredients for the Peanut Butter Sauce in container of an electric blender or food processor; top with cover, and process until smooth.

Place drained pasta in a serving bowl. Add peanut butter sauce and sesame seeds; toss well. Sprinkle with green onions. Serve immediately.

Yield: 8 servings (177 calories per 1/2 cup servings)
