Hi Everyone,

Well, we are enjoying our last cold front, if you want to call it that. The temp has been around 78-81, nice and cool and breezy. The kind of wetaher you want to see crisp, clean clothes flapping in the wind on a long clothesline.

I have left-over meat sauce, much too good to just throw away so I decided to use it in a concoction called Chicken Pizzaola because it tastes like a pizza.

The menu:

Chicken Pizzaola
Green Beans with Red Bell Peppers Strips
Mixed Greens Salad A la Greco

Chicken Pizzaola
serves 2

2 boneless, skinless chicken breasts
salt and pepper to taste
1/2 tsp. oregano
1 garlic clove crushed
leftover meat sauce
grated mozzarella cheese to sprinkle over
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar

In a small glass container, marinate the chicken breasts with olive oil, balsamic, salt and pepper, oregano and crushed garlic. Let sit in fridge for at least 2 hours.

Heat skillet and brown the chicken breasts well. When done, top the chicken breasts with left-over meat sauce and sprinkle generously, mozzarella cheese over. Lower heat to low and cover pan so that cheese will melt.

Green Beans with Red Bell Pepper Slivers
This is a super-easy way to use canned green beans!

1 can green beans
salt and pepper to taste
1 small red bell pepper, seeded and cored

Just empty the canned green beans into a small saucepot and cut the bell pepper into slivers, add and steam. Yummy and easy.

Mixed Greens Salad ala Greco

handful of mixed greens per person
tomato
cuke
green bell pepper
parmesan cheese to sprinkle over
feta cheese crumbled
black olives, pitted
Paul Newman's Vinegar and Oil Dressing

Mix all ingredients and drizzle dressing over.
