Recipe: Chicken Salad in Raspberry Ring with Cantaloupe Balls and Creamy Mayonnasie
Salads - Main DishCHICKEN SALAD IN RASPBERRY RING
"Spectacular in appearance and taste."
2 cups cubed cooked or canned chicken
1 teaspoon salt
2 hard-cooked eggs, chopped
3/4 cup sliced celery
1 teaspoon lemon juice
1/2 cup Creamy Mayonnaise (recipe follows)
Raspberry Ring (for serving, recipe follows)
Lightly toss all ingredients for the chicken salad together. Chill in refrigerator.
Serve in Raspberry Ring. Serve on a large silver platter surrounded with fruit. Pass additional Creamy Mayonnaise. So pretty.
CREAMY MAYONNAISE
Makes 1 2/3 cups
1 cup mayonnaise
1/2 cup heavy (whipping) cream, whipped
Combine mayonnaise and whipped cream.
RASPBERRY RING
3 packages (10 ounces each) frozen red raspberries
2 envelopes plain gelatin
1/2 cup lemon juice
1 1/4 cups boiling water
3/4 cup sugar
1/4 teaspoon salt
3/4 cup cantaloupe balls
Thaw raspberries. Drain, reserving 2 cups syrup (use berries for garnish).
Soften gelatin in lemon juice. Dissolve in 1 1/4 cups boiling water. Stir in sugar, salt, and reserved raspberry syrup. Chill till partially set.
Add cantaloupe balls. Pour into 5-cup ring mold. Chill till firm.
